Welcome to barbecuing and grilling in Hawaii. When the first Polynesians arrived in the Hawaii Islands, they found nothing to eat. The Islands themselves, being very new geologically and very isolated, had little in the way of indigenous life. The Polynesians brought pigs, dogs, chickens, taro and sweet potatoes with them. After James Cook arrived in Hawaii, a steady stream of newcomers started arriving, bringing with them plants and animals from their native lands. Chief among these were Missionaries from New England who brought cows, horses, sheep, and goats as well as a wide variety of new plants. This introduction of new foods and traditions changed the Hawaiian diet greatly. As American business began to move in and develop large plantations, new cash crops, like sugar cane and pineapples were introduced. To man the plantations, immigrants were brought to Hawaii as laborers from places like China, Japan, Okinawa, Korea, Puerto Rico and the Philippines. Each new wave of immigrants brought a new cooking tradition with them. What developed from all this is known as “Local Food”. Poké is a raw fish salad served as an appetizer in Hawaiian cuisine. Poké is the Hawaiian verb for “section” or “to slice or cut”. Ahi poke is made with yellowfin tuna. The modern poke typically consists of cubed raw ʻahi (yellowfin tuna). The traditional Hawaiian poke consists of fish that has been gutted, skinned, and deboned. It is sliced across the backbone as fillet, then served with traditional condiments such as sea salt, candlenut, seaweed, and limu. The present form of poke became popular around the 1970s. It used skinned, deboned, and filleted raw fish served with wasabi and soy sauce.

When we opened our doors in February of 1994, we wanted to recreate the casual bistros we knew growing up in the south of France where people could meet and enjoy light fare with a cup of coffee or a glass of wine. We did not anticipate that Anis would become an instant success and develop such a devoted following. We quickly responded by creating a more traditional French restaurant setting and expanding the offerings from the kitchen but we never lost sight of our vision: to transport our guests to the south of France. Arnaud Michel continues to charm his guests with his genuine affection for the food and wine of his childhood. Memories of growing up – his family’s winery and olive fields in Montpellier, France – fuel the passion that is presented on every plate. The respect for the ingredients and the seasons influence the menu and Michel works with local vendors to secure the most authentic ingredients – wine and cheese from the south of France, pristine produce and seasonal seafood.
Fox Bros. Bar-B-Q started as a friendly backyard gathering with plenty of friends eating good barbecue and listening to live music. The backyard get-together turned into cooking for over 250 people. In 2004 the brothers were introduced to Dan & Beau Nolen, and Mike Reeves of Smith’s Olde Bar. The Fox brothers went from barbecuing in the backyard, to cooking seven days a week at Smith’s and catering various events all over town. In 2005 Jonathan was laid off from his corporate job. This was far from a setback, as catering, alone, had become a full-time job. While serving at Smith’s Olde Bar, the Fox brothers began to receive a lot of local press. They were even announced as runner up for “Best Overall Bar-B-Q” in the city of Atlanta, by the Atlanta Journal-Constitution. With continuing success at SmithÂ’s Olde Bar, the brothers teamed up with Reeves and the Nolen’s to take the barbecue business to the next level.

Petite Violette is Atlanta’s premier, family-owned and operated French Restaurant. Started in 1974 by Wolfgang Gropp, under the name Petite Auberge, Petite Violette has delivered fine French specialties for over 43 years. Chef Gropp received training in the culinary arts as an apprentice in Europe and Canada, studying under renowned chefs, including some trained by Auguste Escoffier, the father of modern French cooking.
